Why did Kate's eyes flash in Dead Man's Blood?

When Kate's talking to Elkins, her eyes flash, and then when all the vamps are gathered by the side of the road just before they attack the couple, a few of them had flashing eyes. Am I right or wrong in thinking that's the only time we ever see fangs have weird eyes?
